Ingredients
1½ lb boneless skinless chicken breasts or thighs cut into 1 inch pieces
1 cup all purpose flour
½ cup cornstarch
1½ tsp garlic powder
1 tsp kosher salt
½ tsp black pepper
3 cups neutral frying oil
½ cup buffalo sauce
3 tbsp unsalted butter
3 cloves garlic minced
1 tbsp chopped fresh parsley optional
½ cup ranch or blue cheese dressing for serving optional
Instructions
1. Pat the chicken dry
2. Mix the flour cornstarch garlic powder salt and pepper
3. Dredge the chicken pieces in the dry mixture until well coated
4. Heat the oil in a deep skillet over medium high to 350°F
5. Fry the chicken in batches 4 to 5 minutes until golden and cooked through
6. Drain on a paper towel lined plate
7. Melt the butter in a small saucepan and sauté the minced garlic 30 to 60 seconds
8. Stir in the buffalo sauce and simmer 1 to 2 minutes
9. Toss the fried chicken with the garlic buffalo sauce until coated
10. Garnish with parsley and serve hot with ranch or blue cheese if desired
Notes
Dry the chicken well so the coating sticks and crisps.
Keep the oil hot between batches for even browning.
