Ingredients
1 lb shrimp, peeled and deveined
1/2 lb white fish (cod or haddock), cut into chunks
1 tablespoon olive oil
1 small onion, diced
3 garlic cloves, minced
1 jalapeño, diced
1 cup corn (fresh or frozen)
2 cups chicken or seafood broth
1 cup heavy cream
4 oz cream cheese
1 tablespoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lime juice
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent.
2. Add garlic and jalapeño; cook for 1 more minute until fragrant.
3. Pour in broth, then add corn, chili powder, smoked paprika, salt, and pepper. Let simmer for 10 minutes.
4. Reduce heat to low. Stir in cream and cream cheese until smooth and fully melted.
5. Add shrimp and white fish. Simmer 5–7 minutes until seafood is just cooked through.
6. Stir in lime juice. Taste and adjust seasoning.
7. Serve hot with crusty bread, tortilla chips, or rice.
