Ingredients
2.5 pounds Yukon Gold potatoes
1 cup chicken broth
4 tablespoons unsalted butter
4 ounces cream cheese
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic (optional)
Instructions
1. Peel the potatoes and cut them into evenly sized chunks.
2. Place the potatoes in the crockpot and pour in the chicken broth. Add salt, pepper, and garlic if using.
3. Cover and cook on high for 3–4 hours or low for 6–7 hours, until potatoes are tender.
4. Once cooked, mash the potatoes in the crockpot using a masher or electric mixer.
5. Add butter, cream cheese, and sour cream. Stir until completely smooth and creamy.
6. Taste and adjust seasoning if needed.
7. Keep on warm setting until ready to serve. Stir occasionally for best texture.
Notes
Use Yukon Gold for best creamy texture.
You can swap sour cream with Greek yogurt if preferred.
To reheat leftovers, add a splash of milk before warming.
