Ingredients

1 lb shrimp, peeled and deveined

3 tbsp butter

4 cloves garlic, minced

1 tbsp lemon juice

1/2 cup heavy cream

1/2 cup chicken broth

1/3 cup grated Parmesan cheese

3 cups cooked white rice

2 tbsp fresh parsley, chopped

1 tbsp fresh dill or basil, chopped

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil


Instructions

1. Pat shrimp dry and season with salt and pepper.

2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Cook shrimp 1–2 minutes per side until pink. Remove and set aside.

3. In the same skillet, lower heat to medium. Add remaining butter and garlic. Cook 30 seconds until fragrant. Add lemon juice and simmer.

4. In a separate saucepan, heat olive oil and add cooked rice. Stir in chicken broth and heavy cream. Let it simmer gently.

5. Stir in Parmesan cheese, parsley, and dill or basil. Season with additional salt and pepper to taste.

6. To serve, spoon creamy herb rice into bowls. Top with shrimp and drizzle garlic butter sauce over the top. Garnish with more herbs and pepper. Serve warm.

Notes

This recipe works great with fresh or thawed frozen shrimp.

Don’t skip the lemon juice—it brightens the dish beautifully.
