Description
These Korean BBQ meatballs with spicy mayo dip are sweet, savory, and perfectly spiced. This easy baked meatball recipe is ideal for appetizers, party snacks, or meal prep and features bold Korean flavors with gochujang, garlic, and sesame oil.
Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 large egg
1/4 cup chopped green onions
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp gochujang
1 tbsp brown sugar
1 tsp sesame oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup mayonnaise
1 tbsp sriracha
1 tsp rice vinegar
Instructions
1. In a large bowl, combine the ground beef, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, gochujang, brown sugar, sesame oil, salt, and pepper. Mix until well incorporated.
2. Preheat oven to 400°F and line a baking sheet with parchment paper.
3. Roll tablespoon-sized portions of the mixture into balls and place them on the baking sheet.
4. Bake for 18–20 minutes or until meatballs are cooked through. Broil for 1–2 minutes for a crispier outside.
5. In a small bowl, mix together mayonnaise, sriracha, and rice vinegar. Chill until ready to serve.
6. Serve meatballs hot with spicy mayo on the side or drizzled on top. Garnish with green onions or sesame seeds.
Notes
Use fattier ground beef or add extra sesame oil if using lean meat.
For extra crispiness, finish the meatballs under the broiler.
The spicy mayo also works great in sandwiches and wraps.
