Description

Traditional Irish Colcannon is a classic mashed potato side dish made with green cabbage, scallions, butter, and cream. This comforting Irish recipe is perfect for family dinners, holiday feasts, or a cozy weeknight meal. Gluten-free and full of flavor, it’s a hearty and wholesome choice for any table.


Ingredients

2 pounds potatoes, peeled and chopped

3 cups green cabbage, shredded

4 scallions, thinly sliced

6 tablespoons butter, divided

1/2 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Peel and chop the potatoes. Place them in a large pot of cold salted water, bring to a boil, and cook for 15–20 minutes until fork tender.

2. While the potatoes are boiling, cook the shredded cabbage in a skillet with 2 tablespoons of butter over medium heat until soft and lightly golden, about 8 minutes.

3. In a small saucepan, heat the heavy cream and remaining 4 tablespoons of butter gently until melted and warm. Do not boil.

4. Drain the potatoes and return to the pot. Mash until smooth.

5. Stir in the warm cream and butter mixture until fully combined.

6. Fold in the cooked cabbage and sliced scallions.

7. Season with salt and pepper to taste.

8. Transfer to a serving bowl, make a well in the center, and drop in a knob of butter. Serve hot.

Notes

Use Yukon Gold potatoes for a naturally buttery flavor.

Make sure your cabbage is finely shredded for the best texture.

For extra richness, substitute part of the butter with Irish cream cheese.
