Trisha Yearwood’s Spinach Casserole is a creamy, cheesy Southern-style side dish made with frozen spinach, cream cheese, and a crispy cracker topping. Ingredients
1 pound frozen chopped spinach, thawed and drained
8 ounces cream cheese, softened
1 cup sour cream
2 large eggs
1 cup grated Parmesan cheese
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup butter, melted
1 cup crushed buttery crackers (such as Ritz)
Instructions
1. Thaw the frozen spinach completely, then squeeze out all excess water using a clean towel.
2. In a large mixing bowl, blend cream cheese, sour cream, eggs, Parmesan, cheddar, garlic powder, onion powder, salt, and pepper until smooth.
3. Add the drained spinach and mix well until evenly combined.
4. Grease a medium-sized baking dish and spread the spinach mixture evenly inside.
5. Mix melted butter with crushed crackers and sprinkle the mixture evenly on top.
6. Bake at 350°F for 35–40 minutes until hot and golden on top.
7. Let rest for 5–10 minutes before serving.
Notes
This casserole can be made a day ahead and baked before serving.
Be sure to remove as much liquid as possible from the spinach to avoid sogginess.
You can substitute Monterey Jack or mozzarella for the cheddar if you prefer a milder flavor.
