Ingredients

2 large chicken breasts

2 tablespoons olive oil

4 garlic cloves, minced

1/2 cup sun-dried tomatoes, chopped

1 1/2 cups heavy cream

3/4 cup grated Parmesan cheese

2 teaspoons Cajun seasoning (more to taste)

2 tablespoons butter

12 ounces pasta (fettuccine or penne)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and Cajun seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden brown and fully cooked. Set aside.

3. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.

4. Add sun-dried tomatoes and stir for another minute.

5. Pour in the heavy cream and bring to a gentle simmer. Stir in more Cajun seasoning to taste.

6. Add Parmesan cheese and stir until melted into a smooth, creamy sauce.

7. Cook pasta according to package instructions. Drain, reserving some pasta water.

8. Add cooked pasta to the Alfredo sauce, along with a splash of reserved pasta water to loosen if needed.

9. Return chicken to the skillet and toss everything together until well combined and heated through.

10. Garnish with fresh parsley and additional Parmesan before serving.

Notes

Let the sauce gently simmer, not boil, to keep it from separating.

If using pre-cooked chicken, add it at the end to avoid overcooking.

Add a splash of milk or cream when reheating to revive the sauce.
