Ingredients
1 tablespoon olive oil
1 large onion, diced
4 cloves garlic, minced
1.5 pounds ground beef
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon smoked paprika
2 tablespoons tomato paste
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1.5 cups beef broth
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 5 minutes.
2. Add the minced garlic and cook for another minute until fragrant.
3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
4. Stir in chili powder, cumin, and smoked paprika. Let the spices toast with the beef for 1 minute.
5. Add tomato paste and mix well. Cook for 2 minutes to deepen flavor.
6. Pour in the diced tomatoes, kidney beans, and black beans. Stir to combine.
7. Add beef broth and bring the pot to a simmer.
8. Reduce heat to low and simmer uncovered for 30 to 45 minutes, stirring occasionally.
9. Season with salt and pepper to taste before serving.
10. Serve hot with toppings like shredded cheese, sour cream, or chopped green onions.
Notes
Let it simmer longer for a thicker consistency.
Chili tastes even better the next day as the flavors develop.
Add cayenne or hot sauce for a spicy kick.
