Ingredients
1 pound potato gnocchi
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes chopped
3 cloves garlic minced
2 tablespoons olive oil
2 cups fresh spinach
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bring a pot of salted water to a boil and cook the gnocchi until they float to the surface. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat and sauté the garlic and sun-dried tomatoes until fragrant.
3. Pour in the heavy cream and let it simmer gently for a few minutes.
4. Stir in the Parmesan cheese and allow the sauce to thicken slightly.
5. Add the cooked gnocchi to the skillet and toss to coat evenly.
6. Stir in the spinach and cook until wilted.
7. Season with Italian seasoning, salt, and pepper. Serve warm.
