Ingredients
1 lb chicken breast
2 tbsp olive oil
3 garlic cloves, minced
12 oz fettuccine pasta
1 ½ cups heavy cream
2 tbsp lemon juice
½ cup crumbled feta cheese
¾ cup grated Parmesan cheese
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
3 cups broccoli florets
¼ cup breadcrumbs
Instructions
1. Season your chicken breast with salt, pepper, oregano, and a touch of lemon zest.
2. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and fully cooked through. Remove and let rest before slicing.
3. Toss broccoli florets in olive oil, salt, Parmesan cheese, and breadcrumbs. Roast at 425°F for 20 minutes until crispy.
4. Boil fettuccine in salted water until al dente. Reserve ½ cup pasta water and drain.
5. In the same skillet used for chicken, sauté garlic in olive oil until fragrant.
