This creamy Vegan Almond Eggnog is a delicious dairy-free twist on the classic holiday drink. Ingredients
2 cups unsweetened almond milk
1 cup full-fat coconut milk
3 tablespoons maple syrup
3 medjool dates, pitted
1/3 cup raw cashews, soaked
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
1/8 teaspoon turmeric (optional)
1 pinch sea salt
Instructions
1. Soak the raw cashews in hot water for about 15 minutes.
2. Drain the cashews and place them in a high-speed blender with the almond milk, coconut milk, maple syrup, dates, vanilla extract, nutmeg, cinnamon, turmeric (if using), and sea salt.
3. Blend until smooth and frothy.
4. Pour the mixture into a saucepan and warm over medium heat. Stir frequently and do not let it boil.
5. Serve warm in mugs or chilled over ice. Garnish with an extra sprinkle of nutmeg and a splash of bourbon or rum if desired.
Notes
Cashew soaking makes the texture extra smooth.
You can chill this drink overnight and enjoy it cold the next day.
For a stronger spice note, increase cinnamon and nutmeg to taste.
