Ingredients
1 ½ cups Medjool dates, pitted
1 cup raw walnuts
½ cup raw almonds
½ cup unsweetened cocoa powder or raw cacao powder
¼ teaspoon sea salt
1 teaspoon vanilla extract
Optional: ¼ cup unsweetened coconut flakes or mini vegan chocolate chips
Instructions
1. Remove pits from the dates if not already pitted. If they’re dry, soak them in warm water for 10 minutes and drain.
2. Add the walnuts and almonds to a food processor. Pulse until finely ground.
3. Add dates, cocoa powder, sea salt, and vanilla extract. Process until the mixture is sticky and holds when pressed.
4. Line a small baking pan with parchment paper. Press the brownie mixture evenly into the pan.
5. Add any optional toppings like coconut flakes or chocolate chips by pressing them into the top.
6. Chill the mixture in the refrigerator for at least 1 hour.
7. Remove, slice into squares, and enjoy.
Notes
This recipe makes about 12 brownie squares.
Store in the fridge for up to 7 days or freeze for up to 3 months.
Let frozen brownies thaw for 10-15 minutes before serving.
