Description

These Vegan No-Bake Brownies with Dates & Nuts are a healthy, fudgy, and indulgent treat made with natural ingredients like Medjool dates, walnuts, and raw cacao. Perfect for gluten-free, dairy-free, and refined sugar-free diets, these no-bake brownies are easy to make, kid-friendly, and freezer-friendly. Ideal for a healthy dessert or snack!

Ingredients

1 ½ cups Medjool dates, pitted

1 cup raw walnuts

½ cup raw almonds

½ cup unsweetened cocoa powder or raw cacao powder

¼ teaspoon sea salt

1 teaspoon vanilla extract

Optional: ¼ cup unsweetened coconut flakes or mini vegan chocolate chips

Instructions

1. Remove pits from the dates if not already pitted. If they’re dry, soak them in warm water for 10 minutes and drain.

2. Add the walnuts and almonds to a food processor. Pulse until finely ground.

3. Add dates, cocoa powder, sea salt, and vanilla extract. Process until the mixture is sticky and holds when pressed.

4. Line a small baking pan with parchment paper. Press the brownie mixture evenly into the pan.

5. Add any optional toppings like coconut flakes or chocolate chips by pressing them into the top.

6. Chill the mixture in the refrigerator for at least 1 hour.

7. Remove, slice into squares, and enjoy.
