Ingredients
2 cups penne pasta
2 cups Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
2 chicken breasts, cut into bite-sized pieces
3 garlic cloves, minced
2 tablespoons butter
1 cup heavy cream
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Boil a large pot of salted water and cook the penne pasta until al dente. Drain and set aside.
2. Cut chicken breast into bite-sized pieces. In a skillet, melt butter over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
3. In the same skillet, add more butter if needed. Sauté minced garlic for about 30 seconds until fragrant.
4. Pour in heavy cream and milk. Stir to combine. Gradually add Velveeta and mozzarella, stirring until smooth and creamy.
5. Return the cooked chicken to the pan. Add drained pasta and toss to coat everything in the sauce.
