1 lb ground beef 1 small yellow onion, finely chopped 2 cloves garlic, minced 2 tbsp taco seasoning 1 tbsp tomato paste 1/4 cup water 1 cup shredded cheddar cheese 1 cup shredded Monterey Jack cheese 4 large flour tortillas 2 tbsp butter or oil for cooking

Step 1

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess fat.

Add chopped onion and garlic to the skillet. Sauté for 3 minutes until soft and fragrant.
