1.5 lbs chicken thighs or breasts 1.5 lbs baby potatoes 6 cloves garlic, minced 0.5 cup grated Parmesan cheese 2 tbsp olive oil 2 tbsp unsalted butter, melted 1.5 tsp Italian seasoning 1 tsp salt 0.5 tsp black pepper 2 tbsp chopped fresh parsley (optional)

Preheat your oven to 400°F (200°C). Rinse and halve the baby potatoes if needed. Pat the chicken dry and set aside.
In a large bowl, toss the potatoes with olive oil, half the garlic, salt, pepper, and Italian seasoning.
In another bowl, season the chicken with the rest of the garlic, melted butter, salt, pepper, and Italian seasoning.
Spread the potatoes on a large sheet pan. Nestle the chicken in between them. Sprinkle everything with Parmesan.
