1 tablespoon olive oil 1 pound ground beef 1 small red onion, chopped 3 garlic cloves, minced 1 zucchini, chopped 1 bell pepper, chopped 1 cup cherry tomatoes, halved 2 cups spinach 2 tablespoons lemon juice 1 teaspoon dried oregano 2 tablespoons chopped fresh parsley 1 teaspoon salt 1/2 teaspoon black pepper

Step 1

Heat olive oil in a large skillet over medium-high heat.
