Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
On a lightly floured surface, unroll your thawed puff pastry sheets.
In a bowl, mix the pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract until smooth.
Spread the mixture evenly over one sheet of puff pastry. Top with the second sheet and press lightly to seal.
