Ingredients
Roll out and pre-bake the bottom pie dough in a pie dish at 375°F for 15 minutes with weights, then 5 minutes without.
In a saucepan, combine fresh strawberries, sugar, and cornstarch. Cook until thick, then stir in vanilla extract and strawberry jam. Let cool slightly.
Pour the filling into the pre-baked crust. Top with second dough, crimp edges, cut slits for steam. Brush with beaten egg.
Bake at 375°F for 35–40 minutes until golden brown. Let cool completely.
