Description

A quick and comforting Weeknight Garlic Butter Rotini with Beef, Italian Sausage and Spinach made in under 40 minutes. Packed with flavor from garlic butter, protein-rich meats, and fresh spinach. Perfect for family dinners or meal prep! Keywords: weeknight rotini recipe, garlic butter pasta, beef and spinach pasta, Italian sausage rotini.

Ingredients

1 pound rotini pasta

1/2 pound ground beef

1/2 pound Italian sausage (mild or hot)

4 cups fresh spinach

4 garlic cloves, minced

4 tablespoons butter

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Reserve 1 cup of pasta water, then drain and set aside.

2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and Italian sausage. Cook until browned and cooked through, breaking up the meat as it cooks. Drain excess grease if needed.

3. Reduce heat to medium. Add butter to the skillet, then stir in the minced garlic. Cook for about 1 minute until fragrant.

4. Add the spinach to the skillet and cook until wilted.

5. Toss in the cooked rotini and mix everything together. Add reserved pasta water as needed to loosen the mixture.

6. Stir in the Parmesan cheese, salt, pepper, and red pepper flakes. Mix well and serve hot.

Notes

This recipe can be made spicier by using hot Italian sausage or extra red pepper flakes.

To make it creamier, add a splash of heavy cream before serving.

It’s easy to add veggies like mushrooms or cherry tomatoes to bulk it up.
