Description

White Bolognese Pasta is a creamy and comforting Italian-inspired dinner featuring ground beef and pork, white wine, milk, and Parmesan. Perfect for family meals, this hearty pasta recipe brings elegance to your table while staying simple to make.


Ingredients

1 tablespoon olive oil

1 medium onion, finely chopped

1 medium carrot, finely chopped

2 stalks celery, finely chopped

3 cloves garlic, minced

250 grams ground beef

250 grams ground pork

120 milliliters white wine

240 milliliters whole milk

1 pinch nutmeg

50 grams grated Parmesan cheese, plus more for serving

450 grams pasta (rigatoni, shells, or pappardelle)

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

1. Heat olive oil in a large skillet or Dutch oven. Sauté onion, carrot, and celery until softened, about 5–7 minutes. Add garlic and cook another minute.

2. Add ground beef and pork, breaking up the meat. Cook until browned and no longer pink.

3. Pour in white wine, scraping browned bits from the pan. Simmer until wine mostly evaporates.

4. Lower heat. Stir in milk and pinch of nutmeg. Simmer gently, stirring occasionally, until thick and creamy.

5. Meanwhile, cook pasta according to package directions. Reserve a little pasta water before draining.

6. Toss cooked pasta with sauce, adding pasta water if needed.

7. Sprinkle with Parmesan and fresh parsley, then serve hot.

Notes

This recipe feeds 4 to 6 people.

Store leftovers in an airtight container in the fridge up to 3 days.

Reheat gently with a splash of milk or cream to restore creaminess.
