Ingredients
300g whole wheat flour
150g all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon brown sugar
400ml buttermilk
Instructions
1. Preheat your oven to 425°F and prepare a baking sheet by greasing or lining with parchment paper.
2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, salt, and brown sugar.
3. Make a well in the center of the dry ingredients and pour in the buttermilk. Stir gently until a rough dough forms.
4. Turn the dough onto a floured surface and knead lightly, just to bring it together. Shape into a round loaf about 1 1/2 inches thick.
5. Place the loaf on the prepared baking sheet. Score a deep cross on top with a sharp knife.
6. Bake for 35-40 minutes until golden brown and hollow-sounding when tapped on the bottom.
7. Cool slightly on a wire rack before slicing. Serve warm or at room temperature.
Notes
This bread is best eaten the day it’s baked for peak freshness.
Do not over-knead the dough as it can become tough.
You can substitute Irish wholemeal flour for a more authentic flavor if available.
