Description

Banana Pudding Brownies are soft, rich dessert bars made with ripe bananas, vanilla pudding mix, and white chocolate chips for a creamy, nostalgic treat that blends the best of banana pudding and brownies in one easy recipe.


Ingredients

1 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 tablespoon vanilla extract

2 ripe bananas, mashed

3.4 ounces instant vanilla pudding mix

1 1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup vanilla wafer crumbs

3/4 cup white chocolate chips


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. Mash the ripe bananas in a bowl until mostly smooth.

3. In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and mashed bananas until well combined.

4. Add the vanilla pudding mix, flour, and salt, then stir just until the batter comes together.

5. Fold in the vanilla wafer crumbs and white chocolate chips.

6. Spread the batter evenly into the prepared pan and smooth the top.

7. Bake for 28 to 34 minutes, until the edges are lightly golden and the center is set.

8. Cool completely in the pan before lifting out, slicing, and serving.

Notes

Use very ripe bananas for the best sweetness and the softest texture.

Do not overmix the batter once the flour goes in, or the brownies can turn dense instead of tender.

Let the brownies cool fully before slicing so they hold their shape and cut neatly.
