Ingredients
1 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 teaspoon salt
3/4 cup semi-sweet chocolate chips
1/2 cup Biscoff spread, for swirling
8 ounces cream cheese, softened
1/2 cup Biscoff spread, for frosting
1 1/4 cups powdered sugar
2 tablespoons heavy cream
8 Biscoff cookies, crushed
2 tablespoons Biscoff spread, warmed for drizzle
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, whisk the melted butter with the granulated sugar and brown sugar until smooth.
3. Add the eggs one at a time, then mix in the vanilla extract.
4. Stir in the cocoa powder, flour, and salt just until combined.
5. Fold in the semi-sweet chocolate chips.
6. Spread the brownie batter into the prepared pan.
7. Spoon 1/2 cup Biscoff spread over the top and swirl it gently with a knife.
8. Bake for 28 to 34 minutes, until the edges are set and the center is still slightly soft.
9. Cool the brownies completely in the pan.
10. Beat the cream cheese until smooth, then mix in 1/2 cup Biscoff spread, powdered sugar, and heavy cream until fluffy.
11. Spread the frosting evenly over the cooled brownies.
12. Sprinkle the crushed Biscoff cookies over the frosting.
13. Drizzle with the warmed Biscoff spread.
14. Chill for 20 to 30 minutes, then slice into 9 to 12 squares and serve.
Notes
For the fudgiest texture, do not overbake the brownies. They should still have a few moist crumbs when tested.
Warm the Biscoff spread slightly before swirling and drizzling so it moves easily through the batter and over the frosting.
Chilling before slicing helps the frosting set and gives you cleaner, sharper brownie squares.
