Ingredients
2 blood oranges
2 ripe avocados
5 cups mixed greens
1/4 small red onion, thinly sliced
1/3 cup crumbled feta cheese
1/3 cup toasted walnuts
3 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Slice the top and bottom off each blood orange, remove the peel and pith, then cut the oranges into segments and set them aside.
2. In a small bowl or jar, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth.
3. Arrange the mixed greens on a serving platter or in a large bowl and scatter the thinly sliced red onion over the top.
4. Slice the avocados just before serving and place them over the greens.
5. Add the blood orange segments across the salad for even color and flavor in every bite.
6. Sprinkle the feta cheese and toasted walnuts over the salad.
7. Drizzle the dressing over the top just before serving and gently toss if desired.
8. Serve immediately while the salad is fresh and crisp.
Notes
Use ripe but firm avocados so they hold their shape in the salad.
