Ingredients
3 cups cooked shredded chicken
1 bag frozen tater tots, about 32 ounces
8 ounces cream cheese, softened
1/2 cup buffalo sauce
1/2 cup ranch dressing
2 cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup sliced green onions
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray or butter for greasing the dish
Instructions
1. Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish with cooking spray or butter.
2. In a large bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, black pepper, 1 1/2 cups cheddar cheese, and mozzarella cheese. Stir until smooth and evenly mixed.
3. Spread the buffalo chicken mixture into the prepared baking dish in an even layer.
4. Arrange the frozen tater tots on top in a single even layer.
5. Bake uncovered for 30 to 35 minutes, until the filling is bubbling and the tater tots are golden and crisp.
6. Sprinkle the remaining 1/2 cup cheddar cheese over the top and bake for 5 more minutes, until melted.
7. Let the casserole rest for 5 to 10 minutes, then top with sliced green onions and serve.
Notes
This casserole is easy to adjust depending on how spicy you like your food.
Rotisserie chicken works especially well here and saves time.
For crispier tater tots, bake the casserole uncovered and do not thaw them first.
