Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 large egg
1/4 cup finely chopped onion
2 cloves garlic, minced
2 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup chopped onion
2 celery stalks, sliced
1 green bell pepper, chopped
1 can diced tomatoes, 14.5 oz
1 can tomato sauce, 8 oz
4 cups beef broth
2 medium potatoes, peeled and diced
2 carrots, sliced
1 tbsp Worcestershire sauce
1 bay leaf
2 tbsp chopped fresh parsley
Instructions
1. In a large bowl, combine the ground beef, breadcrumbs, egg, finely chopped onion, minced garlic, 1 teaspoon Cajun seasoning, salt, and black pepper. Mix gently until combined, then shape into small meatballs.
2. Heat olive oil in a large pot or Dutch oven over medium heat. Brown the meatballs on all sides in batches, then transfer them to a plate.
3. In the same pot, add the chopped onion, celery, and green bell pepper. Cook until softened, then stir in the remaining garlic and cook for 1 minute.
4. Pour in the diced tomatoes, tomato sauce, and beef broth. Stir in the potatoes, carrots, Worcestershire sauce, remaining Cajun seasoning, and bay leaf.
5. Return the meatballs to the pot and bring the stew to a gentle simmer. Cover loosely and cook for 25 to 30 minutes, until the vegetables are tender and the meatballs are fully cooked.
6. Remove the bay leaf, stir in the chopped parsley, and taste for seasoning before serving hot.
Notes
Use a light hand when mixing the meatballs so they stay tender instead of turning dense.
If you like a spicier stew, add extra Cajun seasoning a little at a time near the end of cooking.
This stew tastes even better the next day after the flavors have had more time to settle together.
