Description

Caramel Cheesecake Cookies are soft, rich cookies filled with a creamy cheesecake center and sweet caramel flavor, making them the perfect bakery style dessert for parties, holidays, and everyday baking.


Ingredients

2 1/4 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

3/4 cup brown sugar

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

8 ounces cream cheese, softened

1/3 cup powdered sugar

1/4 cup caramel sauce, plus extra for drizzling

1/2 cup caramel bits or chopped soft caramel candies


Instructions

1. In a small bowl, mix the cream cheese, powdered sugar, and caramel sauce until smooth. Scoop into small portions and place them on a lined tray, then chill until firm.

2. In a medium bowl, whisk together the flour, baking soda, and salt.

3. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and creamy. Mix in the egg and vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms. Fold in the caramel bits if using.

5. Scoop portions of dough and flatten each one slightly. Place a chilled cream cheese filling portion in the center, then wrap the dough around it and seal the edges.

6. Place the filled dough balls on a tray and chill for 20 minutes.

7. Bake at 350°F for 11 to 13 minutes, until the edges are lightly golden and the centers are just set.

8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Drizzle with extra caramel sauce once cooled.

Notes

Chilling the cheesecake filling makes the cookies much easier to assemble and helps keep the centers creamy and defined.

Do not overbake these cookies or the soft texture and creamy middle will be less noticeable.

For the best flavor and texture, let the cookies cool completely before drizzling with caramel.
