Ingredients
8 egg roll wrappers
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
1 egg, beaten
2 cups vegetable oil, for frying
1/4 cup cinnamon sugar
2 tbsp powdered sugar, optional
Instructions
1. In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
2. Lay one egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of filling near the bottom corner.
3. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Brush the top corner with beaten egg and press to seal. Repeat with the remaining wrappers and filling.
4. Heat the vegetable oil in a deep skillet over medium heat until hot.
5. Fry the egg rolls in batches for 2 to 3 minutes, turning as needed, until golden brown and crisp.
6. Transfer to a paper towel-lined plate.
7. While warm, coat with cinnamon sugar or dust with powdered sugar before serving.
Notes
Use fully softened cream cheese so the filling turns out smooth without lumps.
Do not overfill the wrappers or they may open while frying.
For the crispiest leftovers, reheat in an oven or air fryer instead of the microwave.
