Description
Cheesy Baked Potato Casserole is a rich, creamy potato side dish made with tender russet potatoes, sour cream, cheddar cheese, bacon, and green onions, then baked until hot and golden for the ultimate comfort food casserole.
Ingredients
3 pounds russet potatoes
6 tablespoons butter
1 cup sour cream
1/2 cup milk
2 cups shredded cheddar cheese, divided
8 slices bacon, cooked and crumbled
3 green onions, sliced
1 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon black pepper
Instructions
1. Peel the potatoes and cut them into chunks. Place them in a large pot, cover with cold salted water, and bring to a boil. Cook until fork tender, about 15 to 18 minutes. Drain well.
2. Add the hot potatoes to a large bowl with the butter, sour cream, milk, garlic powder, salt, and black pepper. Mash until creamy with a little texture remaining.
3. Stir in 1 1/2 cups of the shredded cheddar cheese, most of the crumbled bacon, and most of the sliced green onions.
4. Spoon the mixture into a greased 9×13-inch baking dish and spread it evenly.
5. Top with the remaining 1/2 cup cheddar cheese and the rest of the bacon.
6. Bake at 375°F for 20 to 25 minutes, until hot and bubbly and the cheese is melted.
7. Remove from the oven, sprinkle with the remaining green onions, let rest for 5 minutes, and serve warm.
Notes
Use russet potatoes for the fluffiest texture and the best classic baked potato flavor.
Drain the potatoes very well so the casserole stays creamy instead of watery.
For extra color on top, broil for 1 to 2 minutes at the end of baking.
