Description

Cherry Coke Jello is a fun, retro dessert made with cherry gelatin, Cherry Coke, and maraschino cherries for a sweet, fizzy, old fashioned treat that is perfect for potlucks, parties, holidays, and easy make ahead desserts.


Ingredients

1 cup boiling water

1 package cherry gelatin, 3 oz

1 cup Cherry Coke

1/2 cup cold water

1/2 cup maraschino cherries, halved and patted dry

1 cup whipped topping, for serving

2 tablespoons maraschino cherry juice, optional


Instructions

1. Add the cherry gelatin to a medium mixing bowl and pour in the boiling water. Stir for about 2 minutes until the gelatin is fully dissolved.

2. Pour in the Cherry Coke and cold water. Stir gently until combined.

3. Stir in the maraschino cherry juice if using, then fold in the halved maraschino cherries.

4. Pour the mixture into an 8ร—8-inch dish, a mold, or individual dessert cups.

5. Refrigerate for 4 hours or until fully set.

6. Top with whipped topping before serving, and garnish with extra cherries if desired.

Notes

Use room temperature or chilled Cherry Coke, but add it after the boiling water has fully dissolved the gelatin so the texture sets properly.

Pat the maraschino cherries dry before adding them so the extra liquid does not water down the dessert.

For the cleanest presentation, wait to add whipped topping until just before serving.
