Description

Chicken Fajita Dinner is a quick and flavorful chicken dinner made with juicy chicken breast, bell peppers, onions, fajita seasoning, and warm tortillas. This easy fajita recipe is perfect for busy weeknights, family dinners, and meal prep, with bold Tex-Mex flavor in every bite.


Ingredients

1 lb chicken breast, sliced into strips

3 bell peppers, sliced

1 large yellow onion, sliced

2 tbsp olive oil

2 tsp chili powder

1 tsp paprika

1 tsp ground cumin

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1 tbsp lime juice

2 tbsp fresh cilantro, chopped

8 flour tortillas


Instructions

1. Slice the chicken breast into thin strips and place it in a bowl. Add 1 tablespoon olive oil, chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper. Toss until the chicken is evenly coated.

2. Slice the bell peppers and onion into thin strips so they cook evenly and stay tender with a little bite.

3. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5 to 7 minutes, stirring occasionally, until browned and fully cooked. Transfer the chicken to a plate.

4. Add the remaining 1 tablespoon olive oil to the skillet. Add the sliced peppers and onion, then cook for 6 to 8 minutes until softened and lightly charred around the edges.

5. Return the chicken to the skillet and stir everything together. Add lime juice and cook for 1 more minute to bring the flavors together.

6. Warm the tortillas and fill them with the chicken fajita mixture. Finish with chopped cilantro and serve hot.

Notes

Use medium-high heat so the chicken and vegetables get a little color without steaming.

Slice the chicken and vegetables into similar sizes for even cooking.

Warm the tortillas right before serving so they stay soft and flexible.
