Description

Ingredients

1 lb chicken thighs

2 tbsp chipotle in adobo sauce

1 tbsp olive oil

1 tsp garlic powder

1 tsp cumin

1 tsp paprika

1 cup black beans

1 cup corn kernels

1/2 cup sour cream or Greek yogurt

1 tbsp lime juice

1 tsp honey

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. In a bowl, mix olive oil, chipotle in adobo sauce, garlic powder, cumin, paprika, salt, and pepper. Add chicken thighs and toss until coated. Marinate for at least 20 minutes or up to 2 hours.

2. Heat a skillet over medium-high heat. Cook chicken for 5–6 minutes per side or until cooked through. Let rest, then slice.

3. In a small bowl, combine sour cream or Greek yogurt, lime juice, honey, adobo sauce, a pinch of cumin, and salt to make the creamy sauce.

4. Warm the black beans and corn in a skillet or microwave. Add salt if needed.

5. In a bowl, layer black beans, corn, sliced chicken, and drizzle the creamy sauce on top. Add optional garnishes like avocado, cilantro, or lime.

6. Serve immediately or let cool slightly for a refreshing bowl.

Notes

A great way to use up leftover grilled chicken or rotisserie chicken.

Adjust chipotle for more or less heat to suit your spice preference.
