Ingredients

2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

3/4 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup freeze-dried strawberries, crushed lightly

1 cup semi-sweet chocolate chips

6 ounces dark chocolate, melted

1 teaspoon coconut oil


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients and mix just until combined.

6. Fold in the freeze-dried strawberries and semi-sweet chocolate chips.

7. Chill the dough for 30 minutes so the cookies bake up thicker and more even.

8. Scoop the dough into equal portions and place them on the prepared baking sheets.

9. Bake for 10 to 12 minutes, until the edges are set and the centers still look slightly soft.

10. Let the cookies cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.

11. Melt the dark chocolate with the coconut oil until smooth.

12. Dip half of each cookie into the melted chocolate or drizzle it over the tops.

13. Let the chocolate set, then serve or store in an airtight container.

Notes

Use freeze-dried strawberries instead of fresh ones so the dough stays thick and the strawberry flavor stays concentrated.

Do not overbake the cookies because they will continue to set as they cool and stay much softer in the center.

Let the cookies cool completely before dipping or drizzling with chocolate so the finish stays smooth and clean.
