Ingredients
6 cups mini pretzels
1 cup unsalted butter
1 cup packed brown sugar
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1/2 teaspoon flaky sea salt
1/2 cup chopped pecans
Instructions
1. Preheat the oven to 350°F and line a large rimmed baking sheet or baking pan with parchment paper. Spread the mini pretzels in an even layer across the pan.
2. In a medium saucepan over medium heat, melt the butter and brown sugar together, stirring until smooth. Bring the mixture to a gentle boil and cook for 3 minutes, stirring often, until glossy and slightly thickened.
3. Remove the saucepan from the heat and stir in the vanilla extract carefully.
4. Pour the hot toffee over the pretzels and gently stir with a spatula to coat them as evenly as possible.
5. Bake for 8 to 10 minutes, until the toffee is bubbling across the pan.
6. Remove the pan from the oven and immediately sprinkle the chocolate chips over the hot pretzels. Let them sit for 2 to 3 minutes, then spread the softened chocolate over the top.
7. Sprinkle with flaky sea salt and chopped pecans, if using.
8. Let the pretzels cool completely until the chocolate and toffee are set, then break into clusters and serve.
Notes
Use sturdy mini pretzels so they hold their shape under the hot toffee.
Do not overcook the toffee or it can turn too hard and slightly bitter.
Let the pan cool fully before breaking the pretzels apart so the chocolate sets neatly.
