Ingredients
2 cups cottage cheese
3 large eggs
1/2 cup milk
1 cup all-purpose flour
2 teaspoons baking powder
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 tablespoon orange zest
1/4 cup orange juice
3/4 cup dried cranberries
2 tablespoons melted butter
1/4 teaspoon salt
Instructions
1. Preheat the oven to 350°F and grease an 8×8-inch baking dish.
2. In a large bowl, whisk together the cottage cheese, eggs, milk, melted butter, orange juice, vanilla extract, and orange zest until well combined.
3. Add the flour, baking powder, granulated sugar, and salt, then stir gently until the batter is smooth.
4. Fold in the dried cranberries so they are evenly distributed.
5. Pour the batter into the prepared baking dish and smooth the top.
6. Bake for 35 to 40 minutes, or until the top is lightly golden and the center is set.
7. Let the bake cool for 10 minutes before slicing and serving.
Notes
Full-fat cottage cheese gives the bake the creamiest texture and richest flavor.
For stronger citrus flavor, add a little extra orange zest just before baking.
Let the bake rest before slicing so it holds together better and serves neatly.
