Ingredients
4 cube steaks
2 cups all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 large eggs
1 cup buttermilk
1 cup vegetable oil
3 tablespoons butter
2 tablespoons flour (for gravy)
2 cups milk
additional salt and black pepper to taste
Instructions
1. Prepare two shallow bowls: one with buttermilk and eggs whisked together, and another with flour, salt, pepper, garlic powder, and onion powder.
2. Dredge each cube steak in the flour mixture, then in the buttermilk-egg mix, and back into the flour. Press to coat well.
3. Heat oil in a skillet over medium-high heat. Fry steaks for 3 to 4 minutes per side until golden brown. Set on a paper towel-lined plate.
4. Pour off most of the oil, leaving 2 tablespoons and the browned bits. Add butter and whisk in flour to make a roux.
5. Slowly add milk while whisking constantly until the gravy thickens. Season with salt and a generous amount of black pepper.
6. Plate steaks and pour hot gravy on top. Serve immediately.
Notes
This dish is best served fresh to keep the coating crispy.
Store leftover steak and gravy separately to prevent sogginess.
Reheat steak in the oven and gravy on the stovetop with a splash of milk.
