Ingredients

12 ounces spaghetti

pounds boneless skinless chicken breasts

1½ tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1½ cups low-sodium chicken broth

1 cup heavy cream

1½ cups low-moisture mozzarella, shredded

Instructions

1. Pat chicken dry and season all over with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium-high. Sear chicken 5 to 6 minutes per side until cooked through; transfer to a board to rest.

3. Bring a large pot of salted water to a boil. Cook spaghetti to al dente; reserve ½ cup pasta water and drain.

4. Reduce skillet heat to medium. Add butter and garlic; sauté 30 seconds until fragrant.

5. Sprinkle in flour; whisk 1 minute to form a blond roux.

6. Slowly whisk in chicken broth until smooth, then add heavy cream; simmer 3 to 4 minutes to thicken.

7. Stir in mozzarella until melted and silky. Adjust with a splash of reserved pasta water if needed.

8. Slice chicken into strips; add to sauce with cooked spaghetti. Toss until coated and creamy.

9. Stir in parsley and lemon juice if using; season to taste.

10. Serve hot with a pinch of red pepper flakes and extra Cajun seasoning if desired.

Notes

Use low-sodium broth so the Cajun seasoning doesn’t make the sauce too salty.
