Description

Creamy Garlic Chicken and Broccoli Bowls are a quick, satisfying dinner made with tender chicken, fresh broccoli, fluffy rice, and a rich garlic Parmesan cream sauce, making them perfect for easy weeknight meals, meal prep lunches, and comforting family dinners.


Ingredients

2 boneless skinless chicken breasts, cut into bite sized pieces

3 cups broccoli florets

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

3 cups cooked rice

1 tablespoon chopped fresh parsley


Instructions

1. Cook the rice according to package directions and keep it warm for serving.

2. Season the chicken pieces with salt, black pepper, and Italian seasoning.

3. Heat olive oil in a large skillet over medium high heat.

4. Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until golden and fully cooked. Transfer to a plate.

5. Add the broccoli to the same skillet and cook for 3 to 4 minutes until bright green and just tender. Remove and set aside with the chicken.

6. Lower the heat to medium and melt the butter in the skillet.

7. Add the minced garlic and cook for 30 seconds until fragrant.

8. Pour in the chicken broth and heavy cream, stirring to combine.

9. Simmer for 2 to 3 minutes, then stir in the Parmesan cheese until the sauce is smooth.

10. Return the chicken and broccoli to the skillet and toss to coat in the creamy garlic sauce.

11. Let everything simmer together for 1 to 2 minutes until heated through.

12. Spoon the cooked rice into bowls, top with the creamy garlic chicken and broccoli, and finish with chopped parsley.

Notes

Cut the chicken into evenly sized pieces so it cooks quickly and stays tender.

Do not overcook the broccoli or it can lose its bright color and fresh texture.

If the sauce thickens too much, stir in a small splash of chicken broth before serving.
