Description

This Creamy Marry Me Chicken Soup is a comforting, rich, and flavorful one-pot meal featuring shredded chicken, sun-dried tomatoes, and a luscious parmesan cream base. Perfect for cozy dinners, easy weeknight meals, and soup lovers. A must-try creamy chicken soup recipe that feels like a warm hug in a bowl.

Ingredients

2 tablespoons olive oil

2 tablespoons butter

1 yellow onion, diced

4 garlic cloves, minced

1/2 cup sun-dried tomatoes, chopped

4 cups chicken broth

1/2 cup heavy cream

4 ounces cream cheese

1/2 cup grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes

3 cups cooked chicken, shredded

2 cups fresh spinach

Salt, to taste

Black pepper, to taste

Instructions

1. Heat olive oil and butter in a large pot over medium heat. Add diced onion and cook until soft.

2. Stir in minced garlic and cook for about 1 minute until fragrant.

3. Add chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes. Let them cook for another minute.

4. Pour in chicken broth and bring to a gentle simmer.

5. Add cream cheese and whisk until fully melted and smooth.

6. Stir in heavy cream and grated parmesan until well combined.

7. Add shredded cooked chicken and fresh spinach. Simmer for 10 minutes to marry the flavors.

8. Season with salt and black pepper to taste.

9. Serve hot with extra parmesan or bread, if desired.

Notes

Use rotisserie chicken to save time on busy nights.

If the soup thickens after refrigerating, add a splash of broth or milk when reheating.

Fresh spinach can be swapped with kale or arugula for variety.
