Description
Crispy Smashed Carrots are a golden, flavorful side dish with tender centers, crisp edges, garlic seasoning, and roasted carrot sweetness, making them perfect for easy dinners, holiday menus, and vegetable side dish lovers.
Ingredients
1 lb carrots
1 1/2 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp grated parmesan cheese
1 tbsp chopped fresh parsley
Instructions
1. Peel the carrots and trim the ends. Cut any very large carrots in half or into thick pieces so they cook evenly.
2. Bring a pot of salted water to a boil and cook the carrots for 15 to 20 minutes, or until fork tender.
3. Drain the carrots well and let them sit for a few minutes so excess moisture can evaporate.
4. Preheat the oven to 425°F and line a baking sheet with parchment paper.
5. Place the cooked carrots on the prepared baking sheet and gently smash each one with the bottom of a glass or measuring cup.
6. Drizzle the smashed carrots with olive oil, then season with garlic powder, salt, black pepper, and parmesan cheese.
7. Roast for 20 to 25 minutes, until the edges are golden and crispy.
8. Remove from the oven, sprinkle with fresh parsley, and serve warm.
Notes
These carrots roast best when they are well drained after boiling, so do not skip the drying step.
Smash gently so the carrots stay mostly intact and develop lots of crispy edges.
For extra flavor, add a little more parmesan or a light drizzle of hot honey before serving.
