Description

Crock Pot Chicken Parmesan is an easy slow cooker chicken dinner made with juicy chicken breasts, marinara sauce, mozzarella, and Parmesan cheese for a comforting Italian inspired meal that is perfect for busy weeknights, family dinners, and simple pasta nights.


Ingredients

2 large boneless skinless chicken breasts

2 cups marinara sauce

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons chopped fresh basil or parsley

8 ounces cooked spaghetti or pasta, for serving

1/4 cup toasted breadcrumbs, optional


Instructions

1. Pat the chicken breasts dry and season both sides with salt, black pepper, and Italian seasoning.

2. Spread a small amount of marinara sauce in the bottom of the crock pot.

3. Place the chicken breasts in the crock pot and top with garlic, olive oil, and the remaining marinara sauce.

4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is cooked through and tender.

5. During the last 20 to 30 minutes of cooking, sprinkle the Parmesan and mozzarella cheese over the chicken.

6. Cover again and let the cheese melt until bubbly.

7. Garnish with fresh basil or parsley and serve over cooked spaghetti or pasta.

8. Add toasted breadcrumbs on top if you want a little crunch before serving.

Notes

This recipe works best with evenly sized chicken breasts so they cook at the same rate.

Add the cheese near the end so it melts smoothly without becoming oily or overcooked.

For a more classic chicken parmesan feel, finish each serving with toasted breadcrumbs right before serving.
