Description

Crockpot Sweet Potato Beef Stew is a cozy slow cooker dinner made with tender beef chuck, sweet potatoes, carrots, onion, garlic, and a rich savory broth. Ingredients

2 pounds beef chuck roast, cut into 1 1/2-inch chunks

2 large sweet potatoes, peeled and cubed

3 carrots, sliced

2 celery stalks, chopped

1 medium yellow onion, chopped

3 garlic cloves, minced

3 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons cornstarch

2 tablespoons water

2 tablespoons chopped parsley


Instructions

1. Prep the beef and vegetables by cutting the beef into even chunks, peeling and cubing the sweet potatoes, and chopping the carrots, celery, onion, and garlic.

2. Add the beef, sweet potatoes, carrots, celery, onion, and garlic to the crockpot.

3. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, and black pepper.

4. Pour the broth mixture over the ingredients in the crockpot.

5. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is fork-tender and the vegetables are soft.

6. If you want a thicker stew, stir together the cornstarch and water to make a slurry.

7. Add the slurry during the last 20 to 30 minutes of cooking and let the broth thicken.

8. Stir in the chopped parsley before serving.

9. Serve hot.

Notes

Use beef chuck if possible because it becomes especially tender in the slow cooker.

Cut the sweet potatoes into fairly large cubes so they stay intact during the long cooking time.

For deeper flavor, brown the beef in a skillet before adding it to the crockpot, although the stew still works well without that extra step.
