Ingredients
1 large head cauliflower, cut into florets
2 tablespoons butter
1 tablespoon olive oil
1 medium yellow onion, chopped
3 cloves garlic, minced
4 cups vegetable broth
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/3 cup grated Parmesan cheese
2 tablespoons chopped parsley
Instructions
1. Heat the butter and olive oil in a large pot over medium heat. Add the chopped onion and cook for 4 to 5 minutes until soft and translucent.
2. Stir in the minced garlic and dried thyme. Cook for 30 seconds until fragrant.
3. Add the cauliflower florets to the pot and stir well to coat them with the aromatics.
4. Pour in the vegetable broth, then add the salt and black pepper. Bring everything to a gentle boil.
5. Reduce the heat and simmer for 18 to 20 minutes, or until the cauliflower is very tender.
6. Use an immersion blender to blend the soup until completely smooth, or carefully transfer it in batches to a blender.
7. Return the soup to low heat and stir in the heavy cream and Parmesan cheese until fully combined.
8. Taste and adjust seasoning if needed.
9. Ladle into bowls and top with chopped parsley before serving.
Notes
For the smoothest texture, let the cauliflower cook until very soft before blending.
If you want a lighter version, you can replace the heavy cream with half and half, though the soup will be less rich.
A topping of extra Parmesan, croutons, or cracked black pepper makes each bowl even better.
