Ingredients

2 pounds boneless skinless chicken thighs

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

3 cloves garlic, minced

1 1/2 cups pineapple chunks

3/4 cup pineapple juice

1/3 cup low sodium soy sauce

1/4 cup brown sugar

1/4 cup ketchup

1 tablespoon cornstarch

2 tablespoons water

1 1/2 cups jasmine rice

1 can full-fat coconut milk, 13.5 ounces

1/2 cup water

1 tablespoon butter

2 green onions, sliced

2 tablespoons toasted shredded coconut

1 lime, cut into wedges


Instructions

1. Pat the chicken dry and season it with salt, black pepper, and garlic powder on all sides.

2. Add the jasmine rice, coconut milk, water, and butter to a medium saucepan. Bring to a gentle simmer, cover, and cook on low for 15 to 18 minutes until tender. Let it rest for 5 minutes, then fluff with a fork.

3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4 to 5 minutes per side until golden and nearly cooked through.

4. Add the minced garlic to the skillet and stir for about 30 seconds until fragrant.

5. Stir in the pineapple chunks, pineapple juice, soy sauce, brown sugar, and ketchup. Simmer for 3 to 4 minutes.

6. In a small bowl, whisk together the cornstarch and water until smooth. Pour it into the skillet and stir until the sauce thickens and turns glossy.

7. Continue cooking for 2 to 3 minutes, until the chicken is fully cooked and coated in the sauce.

8. Spoon the coconut rice onto plates or bowls, top with the Hawaiian chicken and sauce, then finish with green onions, toasted coconut, and lime wedges.

Notes

Use chicken thighs for the juiciest texture, but chicken breast also works if you watch the cooking time carefully.

For a sweeter finish, add a few extra pineapple chunks right before serving.

Let the coconut rice rest before fluffing so it stays light and tender instead of turning sticky.
