Description

Ingredients

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

8 ounces cream cheese, softened

1 cup granulated sugar

2 large eggs

1 tablespoon fresh lemon zest

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/4 cup milk

1 cup powdered sugar

2 tablespoons fresh lemon juice


Instructions

1. Preheat the oven to 350°F and grease or line a standard loaf pan with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the softened butter, cream cheese, and granulated sugar until light and smooth.

4. Add the eggs one at a time, mixing well after each addition.

5. Stir in the lemon zest, lemon juice, and vanilla extract.

6. Add the dry ingredients in batches, alternating with the milk, and mix just until combined.

7. Spread the batter evenly into the prepared loaf pan.

8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

9. Let the bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely.

10. For the glaze, whisk the powdered sugar with 2 tablespoons fresh lemon juice until smooth, then drizzle over the cooled bread.

Notes

For the best texture, let the butter, cream cheese, and eggs come to room temperature before mixing.

Do not overmix the batter once the flour is added or the loaf may turn dense instead of tender.

If the top starts browning too quickly in the oven, loosely cover it with foil during the last part of baking.
