Ingredients

2 boneless skinless chicken breasts

1 cup dill pickle juice

2 eggs

1 cup grated parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons oil for frying


Instructions

1. Place the chicken breasts in a resealable bag or shallow dish and cover with dill pickle juice. Let them marinate in the fridge for at least 30 minutes or up to 4 hours.

2. In one bowl, beat the eggs. In another, mix together the grated parmesan, panko breadcrumbs, garlic powder, paprika, salt, and pepper.

3. Remove the chicken from the brine and pat dry. Dip each breast into the beaten eggs, then coat thoroughly in the parmesan breadcrumb mixture.

4. Heat oil in a large skillet over medium heat. Fry the chicken breasts for 4–5 minutes on each side or until golden brown and cooked through.

5. Let the chicken rest for a few minutes before slicing or serving to keep the coating crisp and the meat juicy.

Notes

For extra crunch, double-coat the chicken by dipping it twice in egg and breadcrumbs.

Use freshly grated parmesan instead of pre-shredded for better binding and flavor.
