Ingredients
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup granulated sugar
1 cup unsalted butter, cold and cubed
1 large egg
2 to 4 tablespoons cold water
6 cups apples, thinly sliced (Granny Smith and Honeycrisp recommended)
3/4 cup granulated sugar (for filling)
2 teaspoons ground cinnamon
1 tablespoon lemon juice
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 egg (for egg wash)
Instructions
1. In a large bowl, combine flour, sugar, and salt. Cut in cold butter until mixture is crumbly.
2. Add egg and enough cold water to bring the dough together. Divide into 2 disks and chill 30 minutes.
3. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking pan.
4. Roll out one dough disk and fit into the pan, pressing slightly up the sides.
5. In another bowl, toss sliced apples with sugar, cinnamon, lemon juice, cornstarch, and vanilla extract.
6. Spread apple mixture evenly over bottom crust.
7. Roll out second dough disk and place over apples. Seal edges.
8. Brush top crust with beaten egg.
9. Bake for 40 to 45 minutes, until golden brown and bubbly.
10. Cool completely before slicing into bars.
Notes
Use a mix of tart and sweet apples for best flavor.
Don’t skip the cornstarch, it helps the filling stay firm.
These slices freeze great for up to 3 months.
