Ingredients
1 cup cottage cheese
1/4 cup unsweetened cocoa powder
3 tablespoons maple syrup
1 teaspoon vanilla extract
1 cup dark chocolate chips
1 tablespoon coconut oil
1 pinch salt
Instructions
1. Add the cottage cheese, cocoa powder, maple syrup, vanilla extract, and salt to a blender or food processor. Blend until completely smooth and creamy.
2. Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in short intervals, stirring between each one, until fully melted and glossy.
3. Pour the melted chocolate into the blended cottage cheese mixture and blend again until thick, silky, and fully combined.
4. Line a small loaf pan or square container with parchment paper. Spoon in the mixture and smooth the top.
5. Refrigerate for 2 to 3 hours, or until firm enough to slice.
6. Lift the fudge from the pan, cut into small squares, and serve chilled.

Blend the cottage cheese thoroughly so the fudge turns out smooth instead of grainy.
