Description

Easy Keto Chili is a hearty low carb dinner made with ground beef, tomatoes, peppers, and bold chili spices for a rich, comforting bowl without the beans. This easy keto chili recipe is filling, flavorful, and perfect for meal prep, busy weeknights, or anyone craving a healthy keto chili that tastes like classic comfort food.


Ingredients

1 lb ground beef

1 tbsp olive oil

1 small yellow onion, chopped

3 cloves garlic, minced

1 green bell pepper, chopped

1 can diced tomatoes, 14.5 oz

2 tbsp tomato paste

1 cup beef broth

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp crushed red pepper flakes

1 cup shredded cheddar cheese, for serving

1/2 cup sour cream, for serving

1 avocado, sliced, for serving

2 tbsp chopped green onions, for serving


Instructions

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and green bell pepper and cook until softened, about 4 to 5 minutes. Stir in the garlic and cook for 30 seconds.

2. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.

3. Stir in the diced tomatoes, tomato paste, and beef broth until well combined.

4. Add the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and crushed red pepper flakes. Stir well to coat the meat and vegetables.

5. Bring the chili to a gentle simmer, then reduce the heat to low. Let it cook uncovered for 25 to 30 minutes, stirring occasionally, until thickened.

6. Taste and adjust seasoning if needed.

7. Serve hot with shredded cheddar cheese, sour cream, sliced avocado, and chopped green onions.

Notes

This chili gets even better after sitting for a few hours, so it is a great make-ahead meal.

For a thicker chili, let it simmer a little longer uncovered until more liquid cooks off.

You can easily adjust the heat by increasing or reducing the crushed red pepper flakes.
